It's amazing how many people have simply forgotten that when the S10 series came out it had a separate Bixby button on the left-hand side of the phone to activate Bixby.
That was short lived, the following year they ditched the Bixby button and incorporated it with the power button. When you first went to set up your phone that button was mapped for the long press as BIXBY.
You had to change it by going to the side key settings, everyone had to do this when they bought an S20 series and later. Then when Smart Switch really took off, people were like set it and forget it. It automatically did it for you because it also moved over your system settings.
Along comes Ui 7 and Google says, you want to keep your license for Android, we want you to change it to Long Press for Gemini.
You were able to change it back then, you can still change it now.
